I Love every single track from this series and I don't have a favorite child among the games :)
 
Heh, Sonic 4, because I love its instruments and the music software it's using. But if I had to pick a specific one in Episode 1, or Episode 2. It would be White Park Zone 2, it has this feeling where it's Twinkle Park, but in a stereo way. Just listen to the music, and you'll understand why Sonic 4's soundtrack, isn't all that bad.
