If we're counting scrapped bosses, then the scrapped ERZ boss with the gravity swapping, lava, and homing missiles has always been the hardest one for me to beat. Other than that I'd probably say the old DSZ boss, or in the current version Metal Sonic though out of everything I've mentioned he's probably the easiest.
