Open SRB2.SRB in a lump editor and look at the TEXTURE1 lump for a list of textures. The flats are all the lumps between the F_START and F_END marker lumps.
Ah, I thought you were editing textures, or something. Yes, if you're making a level, the texture browser is much quicker (although it should only need a single click, not a double-click as you suggest). I'll also point out that, in SRB2DB, you can go straight to the texture browser without going through the linedef properties dialogue by clicking the previews on the info-bar.
