Oh it's the Plant guy.
If you're making a custom cup and would like to have a custom Sealed Star in it, then i would suggest checking out this basic tutorial explaining the basics of making a custom sealed star.

It could also help if you want to make use of certain assets from the stages to make a unique race/sprint map out of them.

I had a look, and I think it's possibly the Act number that determines which Emerald appears in the UFO Catcher - as each of the 14 seen in the main game have an Act number from 1 through to 14. And I believe 15 is for a Wireframe Emerald if I read something right from the source code, but I can't comfirm it right now.

The Emerald that appears is dictated by a value put into the Cup, rather than the Sealed Star itself.
"EmeraldNum" it's called. This can't be used for mods as it requires custom save modification
