GIFs can only handle 256 color (8-bit) palette. OpenGL output at 16 or 24 bits color depth, so the only format to handle that are aPNG.
Can I ask you why you think GIFs can "truecolor" output?
So apply color quantization. It's not exactly a priority when there are a hundred ways to get a gif out of the game (here's one), but it's not an outrageous suggestion.
