How do I record demos?

I've looked through the manual and there doesn't appear to be any way to record demos, despite the presence of other demo-related commands. So how do I record them if I can't do so through the console (unless I actually can and the command was just left out of the manual for some reason), or is the functionality for it simply not there (which I really kinda doubt, what with the commands to play them present and all)?
