Does every water bobbing FOF has to have a different tag to bob on it's own?

When I was making a stage, there was a part with a bunch of bobbing FOF's, the question is, if I want all of them to bounce separately, do I need create a specific tag, for that every single sector, for it to bounce independently?

And, if stage has a lot of tags (100 or more) will that create any problems? I just want to be sure

It shouldn't. You're free to make as many FOFs as you want
