They have to know your IP address, and whenever you host a game, you can use the console command "connect (IP)" and they specify your IP address. another way to do this is to select the "Join (specify IP)" option in multiplayer. You may also use the launcher's join game option, and type the IP...

Do you have to start and END as Hyper Sonic? The only way I normally get into the pool is as Hyper sonic. I just jump right in, nothing happens. What do I do next, complete the stage as HS?

I started at GFZ2 and I got the master emerald, and I played up to CEZ2 without getting a game over. I did have to save and quit due to the fact that the game was lagging.
