ughh, ok let me make an example....

Ok i got it, pretend you have bad eye sight ok? What will make your eyesight better? Glases or contact lense of course! Pretend the playstaion vers and the N64 vers is your regualar eyesight without your glasses, and the Gamecube vers is your eyesight with the glasses.

I hope that was a good example....

What he means to say that the in-game graphics haven't been changed. They just look better because the port is running on GCN hardware, which has a better video card than the PSX does. The game is identical to its original version.

They're just ports.
