For some reason, my IWAD has changed from SRB2.srb, to SRB2.wad How do I change it back?
 
Why does it matter? It's exactly the same. The game will even search for, and load, SRB2.WAD if it can't find SRB2.SRB.

If you must however, it's a simple rename. I think you have to change some settings on your OS, but you should just be able to hit rename, and change the .wad, into .srb.
 
If you have srb2.wad in your folder, it looks for it anyways, whether srb2.srb is in your folder or not. SRB2 doesn't allow you to play netgames if it's loaded.
 
SRB2 will load srb2.wad prioritized over srb2.srb. The reason is that during development we leave the dev copy of the IWAD as srb2.wad, frequently leaving the old IWAD in the directory as srb2.srb. If you're playing single player, it makes no difference, but you'll need to rename the file if you're going to play a multiplayer game.

For those too lazy to read that: Rename your IWAD to srb2.srb and delete any file named srb2.wad, and it'll work fine.
