The Golden Blur
I'd say Mario 64. It has more variety, more Marioness, and way more moves. Mario Sunshine only had that nice spinjump. And I didn't like the idea of having to have everything tropically and with that damn FLUDD on my back at all. You can really see Mario's moves have been a bit limited because FLUDD is supposed to help you to the places.
Really, I prefer a huge fantasy world that doesn't make sense with lots of platforms, enemies, and whatever makes a game fun than a more realistic enviroment where you have a machine on your back that explains your superpowers. It should all just be Mario. Don't make things realistic, guys. Just make the most wacky of things, and remember that freedom is the most important thing a 3D game can have.
